Chicken Fried Rice

This is one of our favorite and easiest recipes and it is Noah approved!

Ingredients
  • Boneless Skinless Chicken
  • Rice (about 3 to 4 cups)
  • 3 Eggs
  • Butter
  • Soy Sauce
  • Onion (optional)

Start by cutting up chicken into bite size pieces. Cook with about 2 tablespoons of butter and a tablespoon of soy sauce in a skillet. This would also be the time to add onion if you are.

One your chicken is cooked all the way you will add your cooked rice to the pan with a little more butter and soy sauce. I honestly don't measure this out and just keep adding until it looks good. While my rice is warming up I scramble 3 eggs in a separate pan and then mix them in.

If you wanted to you can add in a can of mixed veggies to make this a little more healthy. I then continue to cook for about 15 minutes over low heat stirring occasionally.

Cheeseburger Sliders

Since tomorrow is the Super Bowl (Go Pack Go!) I wanted to post a recipe that we tried this week that would be perfect for a Super Bowl party. I found this recipe on one of my favorite cooking blogs and thought I would give it a try. I changed it up just a little bit since I was making less.

Ingredients
In a large bowl mix Hamburger meat, Worcestershire sauce, egg, salt and pepper. Use a small scoop or tbsp to measure out small amounts of the meat mixture to make your patties and then cook them in a skillet

Continue until you have cooked all of the patties and then cut the rolls in half to make the buns. You can top these with any of your favorite burger toppings. We only used cheese because the meat had lots of flavor from the Worcestershire sauce.

These are great to take to a party or to make for dinner!
